I made cookies

Here they are. There’s also a vegan option. Adapted from http://www.pieknits.com/blog/2008/04/saffron_cookies.html

—————————————— • 2 Tbsp. milk, almond milk or water, slightly warmed (microwaving for
10 seconds in a shotglass works nicely for this)
• 3/4-1 tsp. saffron strands, slightly crushed

• 1/2 c. butter (1 stick), or coconut oil, softened
• 1 c. granulated sugar [1]
• 1/4 c. brown sugar, packed [2]
• 1/2 tsp vanilla extract
• 1 egg or small banana, slightly beaten Optional:
• 1 tsp. orange zest
• 1/2 tsp. orange extract

• 2 c. all-purpose flour
• 1/2 tsp. salt
• 1 tsp. baking soda • 1 c. sliced almonds, cashews, or pistachios

—————————————— Preheat oven to 375° F.

Steep saffron in milk for 10 minutes Cream butter and sugars. Add egg. Beat on high for one minute. Add
saffron + liquid. Add orange zest and extract if desired.
Incorporate into sugar mixture. Scrape bowl as needed.

Gradually add flour, salt and baking soda to sugar mixture on low
speed. Mix on high for 1 minute. Scrape bowl as needed. Stir in nuts by hand.

—————————————— Chill for 4-6 hours (or longer) in fridge or 1 hour in freezer (I like
to put the dough into a large [1 gal.] Ziploc bag and shape it into a
flat rectangle - this helps w/ portioning). After chilling, divide
the batter into 24 pieces.

Bake on parchment-covered cookie sheet for 12-14 minutes. The dough
will collapse just as the cookies are ready to come out. Slide paper
and cookies onto cooling rack.
[1] I like to blend the sugar in a blender for 30 seconds or so to
minimize graininess in the cookie. Shake container to ensure all of
the sugar is broken down. You can leave the lid off for this.

[2] Add 1 tsp. of molasses to 1/4 c. sugar to make 1/4 c. brown sugar. I blended 1 1/4 c. of sugar for this and just added 1 tsp. of molasses
to the sugar/egg mixture.

Quantities are “some”. You know what hot chocolate looks/tastes like.
Make it happen! For a nice change, add a few drops of orange extract
